Here’s what you’ll need to whip up a loaf of deliciousness:
For the base:
3 very ripe bananas, mashed (about 1 cup),
1 cup all-purpose flour,
1 cup whole wheat flour,
1 teaspoon baking soda,
½ teaspoon baking powder, and
½ teaspoon salt.
For the sweetness:
½ cup packed light brown sugar,
⅓ cup unsweetened applesauce,
2 tablespoons melted unsalted butter,
1 large egg, and
¼ cup unsweetened almond milk.
For a touch of magic:
1 teaspoon vanilla extract,
½ teaspoon ground cinnamon, and
¼ cup chopped walnuts (optional).

Now, let’s get baking!
Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan. Mash the bananas in a large bowl until smooth. In a separate bowl, whisk together the dry ingredients: all-purpose flour, whole wheat flour, baking soda, baking powder, and salt.
In another bowl, cream together the light brown sugar and applesauce. Beat in the melted butter and egg until well combined. Then, whisk in the vanilla extract and almond milk.
Here comes the fun part: slowly add the dry ingredients to the wet ingredients, mixing until just combined. Don’t overmix! A few lumps are perfectly okay. Finally, gently fold in the mashed bananas and chopped walnuts, if using.
Pour the batter into your prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool completely in the pan before slicing and serving.
