Ingredients:
– 2 cups pure, unsweetened pumpkin puree
– 4 large eggs
– 2 teaspoons ground cinnamon
– 3 cups granulated white sugar
– 3 cups all-purpose flour
– 2 teaspoons baking soda
– 1 teaspoon ground nutmeg
– 1 teaspoon ground cloves
– 1 teaspoon ground allspice
– 1 teaspoon salt
– 1/2 teaspoon baking powder
– 1 cup vegetable or canola oil, or substitute with 1/2 cup unsweetened applesauce
– 2/3 cup water
Instructions:
1. Start by preheating your oven to 350F (175C). Prepare two 9×5-inch loaf pans by greasing and flouring them. If you’re using 8×5 pans, keep in mind they’ll rise more during baking.
2. In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, allspice, baking powder, and salt until well mixed.
3. In a large bowl, combine the sugar, eggs, and oil. Whisk until the mixture is smooth and creamy.
4. Slowly add the dry ingredients to the wet mixture, stirring gently until just combined.
5. Mix in the pumpkin puree and water, stirring until you have a silky batter.
6. Pour the batter evenly into the prepared loaf pans, making sure not to overfill.
7. Bake in your preheated oven for 1 hour. Check doneness by inserting a toothpick into the center; it should come out clean. If it needs more time, give it an additional 10-15 minutes as needed.
8. Allow the bread to cool in the pans for a few minutes before transferring to a wire rack to cool completely.
