*Ingredients:*
*For the cake:*
– 2 ¾ cups all-purpose flour
– 2 cups granulated sugar
– 3 teaspoons baking powder
– 1 teaspoon salt
– 1 cup unsalted butter, softened
– 1 ¾ cups whole milk
– 4 large egg whites4ô
– 2 teaspoons pure vanilla extract
*For the frosting:*
– 1 cup unsalted butter, softened
– 2 cups confectioners’ sugar
– 1 cup sweetened shredded coconut
– 1 cup white chocolate chips
– 2 teaspoons vanilla extract
*For the white chocolate ganache:*
– 1 cup white chocolate chips
– 1 tablespoon unsalted butter
*Instructions:*
1. Preheat oven to 350°F (175°C). Grease and flour three 9-inch (23cm) round cake pans.
2. In a medium bowl, whisk together flour, sugar, baking powder and salt.
3. In a large mixing bowl, combine butter and milk. Beat until smooth.
4. Add egg whites one at a time, beating well after each addition. Beat in vanilla.
5. Gradually add dry ingredients to butter mixture, beating until just combined.
6. Divide batter evenly among prepared pans.
1. Bake 25-30 minutes or until a toothpick inserted in the center comes out clean.
2. Allow cakes to cool in pans 5 minutes, then transfer to wire rack to cool completely.
*Frosting:*
1. Beat butter until creamy.
2. Gradually add confectioners’ sugar, beating until smooth.
3. Beat in coconut and vanilla.
4. Melt white chocolate chips; cool slightly.
5. Beat in melted white chocolate.
*Assembly:*
1. Place one cake layer on serving plate.
2. Spread frosting.
3. Repeat with remaining layers.
*White Chocolate
