Ingredients
– 2 boneless, skinless chicken breasts
– ½ teaspoon salt
– ¼ teaspoon black pepper
– ½ teaspoon garlic powder
– ½ teaspoon dried thyme
– 1 tablespoon olive oil
– ½ cup fresh spinach, chopped
– ¼ cup dried cranberries
– 2 ounces brie cheese, sliced
– 1 teaspoon honey (optional, for extra sweetness)
– Toothpicks (to secure the filling)
Directions
1. Preheat oven to 375°F (190°C).
2. Slice a pocket into each chicken breast without cutting all the way through.
3. Season the chicken with salt, pepper, garlic powder, and thyme.
4. Heat olive oil in a pan over medium heat. Sauté the spinach for 1 to 2 minutes until wilted. Remove from heat and mix in cranberries.
5. Stuff each chicken breast with brie slices, the spinach-cranberry mixture, and a drizzle of honey (if using). Secure with toothpicks.
6. In the same pan over medium-high heat, sear the chicken for 2 minutes per side until golden brown.
