Ingredients:
- 1 cup rolled oats
- 1/2 cup almond flour
- 1/2 cup unsweetened apple sauce
- 1/4 cup coconut oil, melted
- 1/4 cup almond butter
- 1/4 cup chopped nuts (walnuts, almonds, or pecans)
- 1/4 cup dried fruit (raisins, cranberries, or dates)
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
Instructions:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Combine dry ingredients: In a large bowl, mix the rolled oats, almond flour, cinnamon, salt, and baking soda.
- Mix in wet ingredients: Add the apple sauce, melted coconut oil, almond butter, and vanilla extract to the dry mixture. Stir until well combined. The mixture should be sticky but manageable.
- Add nuts and fruits: Fold in the chopped nuts and dried fruit, distributing them evenly throughout the mixture.
- Shape the cookies: Use a spoon to scoop the dough onto the prepared baking sheet. Flatten each scoop slightly to form a cookie shape. These cookies won’t spread much, so you can place them fairly close together.
- Bake for 12-15 minutes, or until the edges are golden brown and the centers are firm.
- Cool and enjoy: Let the cookies cool on the baking sheet for about 10 minutes before transferring them to a wire rack to cool completely.
